Same as German-Style with an added cheese flavor.
Honey BBQ (Seasonal)
A sweet & savory BBQ flavor wrapped into a brat.
These have little chunks of jalapeno mixed in to give it a little kick.
Jalapeno Cheddar (Seasonal)
Same as Jalapeno but with an added cheese flavor.
Sweet with a little heat and a good BBQ flavor.

Baby Back Ribs
These are from the area where the rib meets the spine. They are named “Baby” because these ribs are smaller.
This original Shockinger Recipe is well over 100 years old. It carries a traditional German flavor with a touch of smoke.
Whole and Half Double-Smoked Ham (Seasonal)
Our hams are bone-in and double smoked. These are usually available for Thanksgiving, Christmas, and Easter. Must be ordered in advance!
This is a blend of double-smoked ham and ground pork. It is similar to Meatloaf.
This is double-smoked ham cut an inch thick. These are already cooked so they just need to be warmed up.
Pork Belly (Whole or Half)
Uncured and unseasoned pork. It comes from the same location as bacon or side pork.
Smoked Pork Chop
Smoked and ready to eat. These chops have a great smoky flavor and we recommend just browning them and serving.
A cut of pork that is tenderized and can be breaded or fried for a country fried pork steak.
Pork Roast (Bone-In)
Pork Shoulder that is beautifully marbled to give you a tender, juicy pork roast. This is great for pulled pork.
These are between 1lb. – 2lbs. They are very lean, so we recommend you sear them fast and marinate them.
Our double-smoked ham sliced up for you.
Double-smoked bone-in ham ends. These are great for soup or scalloped potatoes. These are cooked and just need to be heated up.
Hickory Double-Smoked Bacon
Brined and double-smoked to give it a great flavor.
Breakfast Links & 1lb tubes
Coarse ground breakfast sausage that won’t shrivel up in the pan. Good mild flavor that is not loaded up with fat.
Unseasoned ground pork.
Sweet Italian Sausage (Bulk)
Our sweet Italian recipe has a good mixture of fennel and garlic. We season this in-house.
This Original Breidel Recipe is coarse ground and packed with flavor.
This sausage has different seasonings and brine from Braunschweiger. It is served in a ring. We liked it fried or baked.
Pork Chop – Bone-In & Boneless
Unseasoned and raw. We cut them approximately an inch thick, and they are center cut.
Comes from the lower calf. We used the Canadian Style so they are tender. These must be cooked low and slow to remain juicy.
These come from the shoulder and the marbling makes them very flavorful.
This is uncured pork belly that is cut about 3/8 of an inch thick. Tastes great fried.
St. Louis Style Spare Ribs
Lower cut of ribs from the belly side of the rib cage. These are larger ribs with a good amount of meat on the bone. Cook low and slow.
